Mexican Rice

              HOW TO MAKE MEXICAN RICE


                          (This will serve about 4-6 people)





  What you'll need: 



(Might want to consider making one of the slices
a little thinner for rice. You dont want it too big)
 -1big tomato /or 1 1/2
    Roma tomatoes

-1/4 slice of onion

-1 clove/or dash of
            garlic powder
      
-2  Cups of water

I buy long rice

-2 spoons of Caldo de Pollo

-3 spoons of oil/ or you can use
    Pam Spay

-1 Cup of rice
Get yourself a big bottle if
you plan to make lots of  
Mexican foods :)      

2 Roma tomatoes

I use Garlic Salt


                                                 









*Keep in mind you can serve rice with almost any dish!*



Everyone has their own theory on how rice should be made. This is just my way of doing it :) Hope you like it!!

Directions:
(Your going to need a medium size pan with a lid)
Warm the pan on a very low heat setting.

Start by adding the 3 spoons of oil and the 1 cup of rice. Continue to stir until golden brown.

Then in a blender your going to add the rest of the ingredients:
                                               
                                 1Lrg tomato /or 1 1/2 roma tomatoes
                                 1/4 slice of onion
                                 1 clove/or a good dash of garlic powder
                      2 spoons of Caldo de Pollo
                      1 cup of hot water
                      (Optional Add salt to taste)


               *** BLEND*** BLEND *** BLEND***

As soon as you see that everything has been completely blended..it should look sort of pinkish. Quickly add the ingredients to the pan of rice.


(The key to perfect rice is to stir as little as possible)


After pouring in pan you'll hear a loud sizzle. Stir ONE GOOD TIME and then turn up the heat.

As soon as you see the rice begin to sizzle pour 1 cup of hot water into the pan and immediately cover the pan and turn back down to a very low setting. Let it sit for 20 min.

** Do Not Stir** Do NOT Open for 20 min.





(If by any chance you see the rice looking a little dry before 15 min. you can always quickly open the lid and add 1/2 cup of water..but again no stirring)  ;)

After 20 minutes is up..turn off the heat and let it sit  (still covered) for 5 minutes.



When the 5 minutes is up! Uncover and your rice is ready to serve :)
